Ever wanted to know how to process game for the table?

Over the course of two days you will process a fallow deer  into its main joints,  and then into individual cuts. By the end of the two days you will have roasting joints, mince, sausages, steaks, stir fry strips as well as jerky and some cured meat to finish at home. The meat, bones ( for stock) and hide ( if you want it!) are your to take home, all labelled and freezer ready!

Buying pre prepared game can be expensive, but once you know how to do it yourself, it is a very cost effective way to obtain delicious healthy meat. It also has the benefit that it has not been fed rubbish, never lived in captivity and  by eating British Venison you are helping support The hardworking stalkers who work with farmers to manage the deer population!

Skinning
Jointing
More complex butchering
Preservation; drying, curing
Making roasting joints, steaks and other cuts
Mincing for sausages and mince/ burgers
Obtaining game
Storage
Other usable parts and their uses
Suitable tools
Processing roadkill ( safety and practicalities)

The cost of the deer is included, as are all tools and added ingredients you might need. If you have any dietry requirements, please let me know ahead of time so I can source alternatives ( pork and gluten would be of particular importance, as  the sausages are usually augmented with pork, and  gluten containing ingredients. I also offer sweet chestnuts as a sausage additive so let me know about nut allergies).

Depending on numbers the weekend will either be conducted from my home near stowmarket ( suffolk) or from Kentwell hall ( also suffolk)  small amounts of camping are available at mine, and there are many local BnBs.

Bring a coolbox, and coolblocks to transport your meat home.
Tea, coffee and soup  for lunch will be provided. 

 

A whole fallow deer is around 45kg, and is a fairly large undertaking, if you should wish to share the work ( and the meat!) with another person ( friend, or family member)  there will be an additional cost of £75, when attending with a full paying person. 

The days will be long, and fairly full on so I reccommend not  bringing children under 14.
